										<content:encoded><![CDATA[<p>Spiralize Cucumber or Zucchini is a great way to have a fabulous dinner and make Meatless Monday a huge success.</p>
<p>This fresh salad is so easy to make and can be done with so many substitutions. You can accompany this refreshing dish with your protein or snack or a light dinner. This is the perfect opportunity to add some sprouted beans or Microgreens.</p>
<h2>Asian Cucumber / Zucchini Salad</h2>
<p>For two people ingredients</p>
<ul>
<li>Two Cucumbers or Zucchini</li>
<li>Two large Carrots</li>
<li>1 tsp Salt</li>
<li>Two tablespoons Rice Vinegar</li>
<li>1 tsp yellow Lemon Juice</li>
<li>2-3 tablespoons of Honey, to taste</li>
<li>1 tsp Roasted Sesame Oil</li>
<li>Pinch of Red Pepper flakes to taste.</li>
<li>½-1 tablespoons of roasted sesame seeds</li>
<li>Two tablespoons fresh coriander, chopped (optional)</li>

<h2>Instructions</h2>
<ul>
<li>If you have a spiralizer, use it to spiralize the cucumbers or Zucchini and carrots into long noodles; if you don&#8217;t have a spiral, cut the carrots and cucumber finely with a knife.</li>
<li>Spiral Cucumber/Zucchini in a strainer and mix with one teaspoon salt.</li>
<li>Let the cucumber squeeze for 10 minutes to remove excess water.</li>
<li>Meanwhile, mix vinegar, lemon juice, honey, sesame oil, red pepper flakes, and sesame seeds in a small bowl.</li>
<li>Once the cucumber has drained a bit, spread it over a layer of paper towels or a clean kitchen cloth, and gently rub as much moisture as possible. Place the ′′ noodles ′′ in a large bowl and add 2-3 tablespoons of dressing to cover. Mix to match, then adorn with sesame seeds and fresh coriander. And done</li>

<p>Note: If you spare salad stores in an airtight vessel in the refrigerator for up to a day, but keep in mind that the cucumber will continue to release excess water while settling. <p>Here is one we are sure you will love and give you the feeling like you have some texture like a burger. So make your meatless patties and serve them on a Lettuce wrap or bun. This is another recipe you can be creative and substitute. <h2>Lentil Patties that are Super High in Protean</h2>
<p>If you&#8217;re trying to reduce your animal protein consumption and start living a vegan lifestyle, start one or two days a week! For example, today, Monday! There is an international nonprofit campaign called Meatless Monday where they motivate people to reduce their meat consumption for their health, to help save the planet and for animals.</p>
<h2>Lentil Patties With Potato</h2>
<h3>Ingredients</h3>
<ul>
<li>Two large potatoes/or sweet potatoes peeled and cooked average size, not the little ones.</li>
<li>2 cups of red lentils/or Yellow/ already cooked</li>
<li>1/2 onions, chopped</li>
<li>Two cloves of garlic</li>
<li>Two teaspoons of turmeric</li>
<li>Two teaspoons smoked paprika * optional</li>
<li>One teaspoon cumin</li>
<li>One teaspoon coriander</li>
<li>Two teaspoons parsley (fresh)</li>
<li>1/2 + teaspoon salt and pepper to taste</li>
<li>Olive oil or Coconut oil</li>
</ul>
<h3>Preparation</h3>
<p>Place potatoes, lentils, onions, garlic, paprika, cumin, coriander, parsley, and salt and pepper in a blender/food processor and blend them until well incorporated.</p>
<p>Take the mixture and place it in a bowl, shape balls like the size of a meatball, and then mix gently, rolling them in the palms of your hands.</p>
<p>Then take them and push them into patties yet not to hard, then let them sit for a while.</p>
<p>Now, heat the pan and add some oil and start adding the patties and cook them for 4-5 minutes on each side.</p>
<p>Served on a bed of vegetables, with a small cucumber salad and maybe some guacamole or whatever your heart desires. These taste great and give you the sensation that you are eating meat. So let&#8217;s all do our part and try these recipes or ones like it and join the meatless revolution. We all need to help do our part.</p>
