  • 1 cup Quinoa, let soak for 12 hours and rinse
  • 2 cups of water
  • 1/4 teaspoon salt
  • 1 1/2 cups peeled frozen edamame (steam)
  • Three medium carrots, peeled and diced
  • 1/2 yellow pepper, diced
  • 1/2 red pepper, diced
  • 1 cup of purple cabbage
  • Two tablespoons of sesame oil
  • Two tablespoons of rice vinegar
  • Three tablespoons of fresh ginger, finely chopped
  • One tablespoon of hemp seeds

Preparation:

Place your Quinoa, water, and salt in a covered pot. Heat over medium heat until it boils, lower heat, and cook for about 15 minutes or wait till the Quinoa is soft, and water is absorbed.

Pour the Quinoa into a medium bowl and mix the frozen edamame, carrots, bell peppers, and purple kale.
In a little bowl or jar to shake, prepare the dressing by mixing Sesame oil, Rice Vinegar, chopped Ginger, and Sesame seeds.

Pour the dressing mixture over the Quinoa and vegetables, and mix well. Enjoy it immediately, or save it in a covered container for later.
